Freezer Mash


6-8 large potatoes peeled and cut up, cooked in pot on stove
1 Tbsp butter
¼ tsp salt and pepper (if desired)
Chopped parsley (optional)
½ tub cream cheese (about 125gm)

Cook potatoes and drain

Add butter, salt and pepper, parsley and cream cheese and mash until no potato lumps left.

Cool pot in sink of cold water

Divide into portions and place in ziplock bags for the freezer

To use, thaw, place in a dish and microwave on high for approximately 4 mins or until hot.
