1 diced onion
2-3 cloves crushed garlic
Pinch of curry powder and pinch of nutmeg or cinnamon
4 cups chopped pumpkin
2 medium peeled, diced potato
2c chicken stock
Saute onion and garlic til soft, add spices and stir through onions, add pumpkin, potato and chicken stock. Add water to make sure veg are covered. Simmer until veg are soft. Blitz with stick blender or in food processor. Can add cream, sour cream and chives or bit of milk just before serving.
Change and use coriander instead of chives.
This is good on it’s own or add to cooked pasta like a sauce – add some roasted pumpkin pieces and fried bacon for a pasta bake type dish.
Variations: fry off some red chilli paste instead of curry powder, add some coconut milk just before blitzing.
Add whatever root veges you have (kumara, parsnip, swede….)
