 Whole Orange Cake

1 Whole orange (Remove some pith if it has alot to prevent bitterness)

1c Caster Sugar

180gm Butter

1.5C Self Raising Flour

3 Eggs

Blend the orange until smashed up a bit. Add in the other ingredients. Blend some more. Biff it in a cake tin and bake for 30-40mins at 180 Degrees!

The orange can be interchanged with any other citrus. Ice with a quick icing –

Icing sugar

Orange or lemon rind

Orange or lemon juice

Let it drizzle over the cake – Keeps for a solid week (If it lasts that long) Travels well for camping!
