Lemon Yoghurt Cake

This Lemon cake is all made in the BLENDER & then poured into the baking tin then into the oven!

1 3/4c sugar                               }

2 Lemon rinds (grated finely)       }     Blend

1/2t salt                                    }

1 c canola oil                             }

2 eggs                                      } Add & blend

1 c natural yoghurt                    }

Juice of 1 lemon                        }

2 c self raising flour                   } Add & pulse

Cook for approx 50min @ 170c in round tin. once out of oven i added a bit of lemon spread to top of cake then sprinkled some sugar on top. Sooooooooo yummy 🙂
