Chocolate Bourbon Cake with Chocolate Honey Sauce
1tsp vanilla essence
100ml bourbon or whiskey
1C boiling water
2C caster sugar
2C plain flour
2tsp baking soda
METHOD:-Preheat the oven to 180. Line a 23cm cake tin with baking paper.
-In a bowl whisk together the cocoa, vanilla, bourbon/whiskey and boiling water.
-Beat eggs and sugar until light and fluffy, then beat in the oil.
-Add the buttermilk and boiling water mixture.
-Sift the flour, salt and baking soda into the bowl and beat for a minute or more until shiny. (It will have the consistency of batter).
-Bake for 50-60 minutes or until a skewer inserted into the centre comes out clean.
SAUCE:200g bittersweet chocolate, cut into small pieces
2Tbsp bourbon/whiskey (optional)
METHOD:Combine all ingredient in a small saucepan, including booze if using, and heat gently stirring until smooth.
Serve with the chcolate sauce and ice-cream or cream.
